What is a Dalgona Cookie?

A dalgona candy or cookie is a flat circular toffee biscuit that measures around 8cm in diameter. It is a beautiful golden brown, made almost entirely from sugar. The cookie itself is somewhat crunchy (very crunchy in fact) and has a caramel, toffee taste. In some recipes, the cookie has a slight bitterness to it. This is due to the caramelised sugar.

The Squid Game (Dalgona Challenge)

The television show Squid Game on Netflix has a few episodes that feature this cookie. (warning: this show is not a children's show). Contestants in the show were asked to play a series of children's games with their lives on the line. The Dalgona challenge was one such game. On the Dalgona cookie is an outline of a symbol. The aim of the game is to use a sharp object, like a pin or a toothpick, to carve out the shape in the middle of the cookie. If you crack the symbol or run out of time, you lose.

How To Make a Dalgona Cookie

The ingredients to make the cookie is simple. The technique is complex.

Ingredients

• 99 Parts Sugar
• 1 Part Baking Soda

Directions

1. Use a non-stick pan (it must be a non-stick, you definitely don't want these sticking!)
2. Heat the sugar until it is caramelised. Remember to stir continuously and be careful not to burn the mixture.
3. Add baking soda.
4. Keep on stirring until everything is a fluffy, lightweight liquid.
5. Pour the sugar & soda mix into a circle mould on a baking tray.
6. Let it cool down, but do not let it harden.
7. Press a mould of a symbol of your choice (square, umbrella, etc.) gently, taking care not to puncture the cookie.
