Do you love fortune cookies as much as I? Receiving a fortune cookie, with a unique message is like opening a box of chocolates, you never know what you are going to get. I am going to share with you a recipe (I was going to write easy, but it really isn't) for custom message fortune cookies. Check it out (and if you cannot be bothered making them yourself, you can always buy your custom message fortune cookies from us).

Ingredients for Cookies

- 2 x Eggwhites
- Vanilla extract 1 tablespoon
- almond extract 1 tablespoon
- vegetable oil 3 tablespoon
- flour 100 grams
- cornstarch 2 tablespoon
- salt half tablespoon
- sugar 1 tablespoon
- water 2 tablespoons

In a bowl beat the egg whites, combine all the above ingredients and combine well with a spoon. Use your hands if you need to.

Step 2 Circles, please!

Using a pastry circle cutter that is 7cm in diameter scoop out a tablespoon of batter onto the circle, then use your thumb and spread it around the circle.

Baking the Cookie

Each circle represents each cookie (if you have not worked that out yet). Bake for 11 minutes at 180 degrees.

Shaping the Cookie and Add your Message

Fresh out of the oven, the cookie is soft, but you have to work quickly. The moment it cools down, it will be hard and crunchy. Promptly get your fortune message (which you would have printed onto a thin strip that measures 6x1cm).
1) Place the message onto the middle of the circle batter
2) fold circle batter in half
3) on the folded edge, press it and push it against the top of a cup to create that iconic fortune cookie look

• Allow to cool, and you are done.
